Egg Whites

The clear part around an unfertilized egg has been considered the healthiest part of the egg. Egg whites contain no cholesterol and are ver low in calories because they are almost pure protein.

Although egg whites are considered “healthy”, they contain high levels of avidin, a protein that binds to biotin. Biotin is important to maintain healthy skin, hair, and nails. Cooking the whites denatures the protein avidin to reduce its binding effect, but eating cooked whites still have a binding effect that could increase risk of hair loss and seizures. Egg whites are a good source of protein and can help for people with diabetes but they should not be considered as healthy as the whole egg because they do not provide the same nutritional benefits.
